Chef Jacob Demars, 31, formerly of Marlene's at Sevastopol Station, has taken the reins of the kitchen of Trostel's Dish at 12851 University Ave. in Clive.
Demars is known for creating exquisite and striking presentations using local ingredients.
Trostel's Dish serves tapas-style and small-plate dishes for lunch and dinner in a modern atmosphere with an outdoor patio and features a wine list of over 100 varieties. Salads, cracker crust pizza and big plates like prime rib, mac and cheese, and pan-seared salmon are also available.
Suzanne Summy, owner of Trostel's Dish, has been following Demars' career and reached out to offer him a position.
"I came in and saw the kitchen and fell in love with it," Demars said. "From there, I wanted to come in and start as soon as I could."
Summy said new lunch and dinner menus are in the works for the fall season. Demars said there will be a few changes to the lunch menu, but the dinner menu will be greatly revised, and they should be ready by Sept. 17.
Demars said he's excited for some of the fall dishes he has in store, including fried apple cider doughnuts with compressed slices of apple in sumac, served with a brown sugar and cinnamon ice cream; a laminated brioche with Vermont maple syrup, cream cheese and bacon jam; and a romaine salad with goat cheese espuma with toasted almonds and dried cherries.
"Everything we've been putting together so far has been really composed and I am really excited about it," Demars said.
Trostel's Dish's sister restaurant, Trostel's Greenbriar, is located in Johnston.
Originally from Massachusetts, Demars worked at restaurants in Denver and also Chicago eateries like Spiaggia, Juno Sushi Chicago and Michelin-starred Elizabeth Restaurant.

Demars moved from Chicago to Des Moines with his wife, Kathleen McGuire, a Des Moines native, in 2017, and took over the kitchen at Marlene's at Sevastopol Station.
Marlene's closed shortly thereafter, but Demars kept busy holding pop-up dinners for his own company, Open Circuit Dining, at places all over town like the Yellow Door Gallery and the Des Moines Social Club.
Demars said he is discontinuing the Open Circuit Dining pop-up dinners in lieu of doing private dinners at Dish instead. Demars said this could lead to some tasting menus joining alongside the a la carte menus.
